RECIPES:  Marijuana Butter

HOW MUCH MARIJUANA DO I NEED?
The question is how much marijuana do I need to use to create good medicine? Because marijuana quality varies, it is impossible to predict exactly how much to use in order to achieve the desired results. It is better to get it weak instead of too strong until you know your tolerance to marijuana edibles.   You can also use the sticks you have left from trimming your marijuana plants to make medicine.  Waste not!  
If you intend to cook often, you might prefer making larger batches instead of always needing to make more butter. The chart on the right will help with estimations on what to expect using different qualities of marijuana. Simply increase the amounts you use to make larger batches.

MARIJUANA BUTTER #1 (Small Batch) 
Often we have limited amounts of marijuana to make medicine with. This recipe calls for only 3 teaspoons of bud or 6 teaspoons of leaf.

Ingredients
  • 1 stick of unsalted butter
  • 1 cup of water
  • 10 grams of marijuana which measures out to 3 teaspoons
  • If you use leaf instead of bud, I'd double the marijuana to 4 teaspoons

Directions

  • Put the above into a double boiler where the mix is cooked over water.
  • Stir every half hour or so.
  • Let it cook on low heat for several hours. Up to six hours will make sure you are getting a good THC content.
  • Strain out the marijuana from the butter/water mixture using cheese cloth over a strainer and/or possibly a coffee filter.
  • Squeeze filter material to remove as much butter mix as possible.
  • Pour into a small aluminum pan.
  • Place in freezer for about 45 minutes.
  • Once taken from freezer, poke a hole in bottom of corner of pan to drain water from butter. (Do not freeze too long. You DO NOT want the water to freeze.)
  • Refrigerate or freeze until ready to use.

MARIJUANA BUTTER  #2
Have two pots or a double boiler ready.

Ingredients
  • 1 lb. unsalted butter (4 sticks/2 cups)
  • 1/4 oz. to 1 oz. of marijuana buds or use 6-8 Tablespoons of ground up marijuana leaves
  • Strainer and cheesecloth
  • Small container

Directions

  • Using a double boiler (or two pots), melt the butter at low heat. If using two pots, fill the larger (bottom) pot with water and the smaller (top) pot with butter.
  • Once the butter has melted, add the marijuana.
  • Simmer on low heat for at least 30 minutes stirring every 5 minutes. To extract the maximum THC from your marijuana, simmer for 2-3 hours.
  • Let the butter cool for 5-10 minutes then strain the pot butter using cheesecloth lining the strainer into a small bowl.
  • Cover and refrigerate until semi-solid to cook with. You can also freeze the marijuana butter to save for later.

If you want to make a very large batch of marijuana butter, I have used this recipe successfully using only leaves (also called shake and/or trim). Pick through your shake to make sure all the stems are removed. All you want to use is the sugar and water leaves. I then mulch up the trim in a food processor. Be aware that you can gum up any device you use to grind with. You might need to stop and scrape off marijuana resin. Don't throw it away! It can be added to the ground up shake before cooking.
Now comes into play just how much shake/trim you have on hand. I have made up this chart to help keep track of just what I am doing. I am a person that needs to chew up information internalizing it to make sense to me. I knew I was getting confused on just how much butter to water, etc. I needed for this recipe that appeared to be simple enough; but not simple enough for the likes of me. I could not deal with 1/3 of a pan. I needed to see a concrete measurement.

Fill your pot 1/3 of the way with the mulched leaf. Pick the pot according to how much marijuana leaf you actually have. It can be very little or huge amounts using more than one very large pot. You now add sticks of butter and water at a 1-4 ratio. Do this until the pot is filled 2/3 full. If you fill it all the way, it will overflow once it starts to boil. Trying to be careful, I even measured my pot so I would know what 1/3 of the pot was and again for the 2/3 marker. I used a pen to draw a line on my largest pot showing both measurements. See the images below for my process.

I used a 10" H x 11" W pot using 32 cups of water with 4 lbs. of butter. One third of the pan was approximately a whole grocery bag full of trim/shake/leaf.

Turn the burner up all the way and monitor, stirring as needed. This allows the mixture to get as hot as possible. I kept this going until half the water evaporated. It took approximately 1.5 hours. I added more water until the water level is back to the 2/3 marker again. I repeated this twice. I started at 10:45 a.m. At 12:15, I added more water and again at 1:15 and 2:15. At 3:00, I considered it done. I kept notes so I could actually teach someone to do the same.

After three to four hours, lots of oil will be floating on top of the mix. That is the sign you have been waiting for to know you are done. Using a bacon splatter screen made it easy to get that vegetation strained from the pot. Put on some gloves so you can hand squeeze the rest of the oil from the leaves ending up with a ball of marijuana leaves. Be sure to keep the vegetation to use later.

I then took the huge pot out to the garage fridge that had some room in it and stored the pot of oily water overnight. The next morning, it was easy to scoop out the marijuana butter that had solidified on the top of the water. I suggest using this method only if you need to make quite a bit of butter at one time. (This butter is amazingly strong. Using only a 1/4 teaspoon on a pancake had my husband pretty well "stoned".)

MARIJUANA BUTTER  #4
This recipe is the easiest and neatest less-mess marijuana butter that I have ever made! Choosing this recipe is perfect for the patient that wants to make no more than one pound of butter at a time.

Ingredients
  • 1.5 ounce of bud (or at least double the amount if you are using leaf)  
  • 4 sticks of unsalted butter
  • Cheese Cloth
  • Mason Jar Quart Sized
  • Cooking Pan

Directions
  • Chop up the marijuana and then wrap it in cheesecloth as if you were making a Burrito using string to tie it up so it cannot come apart.
  • Place the burrito of marijuana in a quart sized canning jar along with the 4 sticks of butter. You might have to squish that butter into the jar. Now place a lid on the canning jar. I use those plastic lids made to fit canning jar, but a two part metal canning jar lid works just fine.
  • Place the closed jar into boiling water in a pan large enough to hold the jar.  
  • Once every hour shake or stir the jar. Cook the mixture four to six hours.  
  • Remove from water and pour the butter into a small bowl and squeeze the marijuana burrito until the last drop. 
  • Place in the refrigerator until firm. No straining of anything! If any vegetation is objectionable; use a coffee filter pouring the butter into the bowl. I did not find this necessary.

Cannabis Apple Butter Recipe

Ingredients
  • 1 tbsp brown sugar
  • 1/2 cup cannabis butter
  • Butter dish
  • 2 ounces dried chopped apples
  • 1/2 tsp cinnamon
Directions
  • Add brown sugar, dried apple, and the cinnamon to softened marijuana butter.
  •  Toss all of the ingredients in to a food processor and blend them together until they are fully combined.
  •  This butter can be stored in the fridge for up to a week and frozen for up to two months.
  •  It’s great on bagels, scones, muffins, pancakes, waffles, etc.
